Main Street Manchester got a little tastier, reports the Hartford Courant. That’s because the owners of the popular Lucky Taco food truck, Erin and Dave Emmons, found a suitable bricks-and-mortar building to expand their business.
The food truck, nicknamed Flaco, quickly gained fans while stationed in Hartford’s Bushnell Park. With classic carnitas tacos and imaginative kung pao chicken burritos, the duo began focusing on a location to expand their offerings. They worked with local mentors from Service Corps of Retired Executives (SCORE), writing a business plan and scouting possible locations.
The couple signed papers on Sept. 22, and three weeks later opened the cantina side of the Lucky Taco Cantina and Tap Room. Just over a month later the tap room opened in time for the Manchester Road Race.
The couple will likely bring Flaco back to Bushnell Park in late spring for a few days a week. Meanwhile, many Lucky Taco fans have journeyed to Main Street, Manchester, and the restaurant has attracted plenty of new regulars.
“We’ve had a great response in Manchester. Every day I meet someone new and every day they’re so happy we’re doing something on Main Street,” said Mr. Emmons via the Hartford Courant.
